Here is a quick one-dish stir fry recipe to make a Fried Rice dish with our Tom Yum Sauce. You can enjoy the usual Tom Yum taste you normally know from soups, but as a Fried Rice dish. You can choose between prawns, chicken or tofu or a mix of those. You can use any type of vegetable you want as long its suitable for stir frying, so we suggest to choose something like spring greens, pak choi, white cabbage, mustard greens or Kai Lan.
Ingredients:
250g of cooked rice or microwave rice
2 teaspoons of vegetable oil
10-15g of chicken, prawns or tofu (cooked or raw)
Few leaves of vegetables such as greens or similar
Quarter piece of lime
Coriander
1 stem of lemon grass (optional)
1-2 small tomatoes / cherry or plum tomatoes (optional)
50g of KOBB's COOKING Tom Yum Sauce
PREPARATIONS
- Cook the rice and let it cool down. If you use microwave rice, wave it before you start.
- If you use chicken or tofu, cut them into stripes or pieces
- Cut the vegetables if the leaves are big. Don't cut them too small as they will shrink when you stir fry them. Separate the stems from the leaves. You can still add the the stems to keep the crunchiness of the vegetables.
- Slice the lemongrass into small tiny slices. As they should be chewable, the smaller the better.
- Cut the tomatoes into quarter pieces
- Cut the lime into quarters
INSTRUCTIONS
To start with your TOM YUM Stir Fry, heat 2 teaspoons vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the chicken, prawns or tofu and the lemongrass and stir fry for 1 minute.
Add the vegetables and tomatoes and stir fry for 1 minute. If you don't want the vegetable leaves to shrink, you can add the stems now and the leaves later when adding the rice. You can add 1-2 tablespoons of water to the skillet and let the vegetables steam another minute until bright and tender.
Add the rice to the skillet. Cook, stirring constantly, 3-4 minutes on higher heat.
Add the KOBB'S COOKING Tom Yum Sauce by pouring over the rice. Cook for 4-5 minutes until sauce has thickened and the rice is coated.
Add the remaining vegetables leaves if you haven't yet and toss once more to coat.
Put it on a plate and garnish with coriander and lime.
